This exceptional coffee, sourced from Ethiopia and produced by Elto Coffee, is processed using a semi-washed method. The cherries are pulped and then dried with some of the mucilage, giving the cup a subtle balance between the clarity of a washed coffee and the sweetness of a natural coffee. Roasted to an omni roast, it reveals all its qualities regardless of the extraction method. In the cup, there is a mild but persistent acidity with citrus notes, supported by a honeyed sweetness that brings roundness and balance, and a long, textured finish reminiscent of brewed black tea.
